We eat well when we are camping -- particularly when we bring out the old black pots (Dutch ovens). This recipe is for a hearty one-pot meal that is easy and delicious. Potatoes are always a crowd pleaser. I added ham, and it was delicous, but bacon or sausage would also have worked well.
Ingredients:
- 4-5 potatoes (medium sized) cut into cubes
- 1 lb or so ham or other meat
- 1 onion, chopped
- 1 pepper, chopped. (For a group, I like to use Anaheim or Poblano because they have flavor but are pretty mild. Go as hot as you dare.)
- 2 cloves garlic, minced
- 1 stick butter
- 1+ teaspoon salt
Directions:
Start the coals. Chop the potatoes and put them in a pan of cool water. Chop the onions and peppers.
When the coals are starting to get hot, put some under the Dutch oven to start it heating. Add the stick of butter. When it melts, saute the onions and peppers until they start to soften.
If you are using raw meat, add it next and cook it until done. If you are using precooked meat, add it with the potatoes.
Add the potatoes and any cooked meat.
Sprinkle on the salt and any other spices you choose.
Stir good to coat everything with the melted butter.
Cover, with hot coals on the lid, and let cook. When you start to smell the potatoes, lift the lid and stir everything again.
Cook until done (usually an hour or so).
