1 cup flour
1 cup yellow corn meal
1 cup sugar (more if desired)
4 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1 cup oil
Mix flour, cornmeal, sugar, baking powder and salt. Beat eggs and add milk and oil. Pour into dry ingredients and beat until smooth. Pour into a well-oiled 12" Dutch oven and place on a bed of coals. Add coals on lid (oven should bake at 350-400 degrees). Bake for 10 minutes, remove from coals and continue baking with heat from top only for an additional 10-15 minutes or until bread is golden.
