1 lb. Bacon
2 or 3 onions (diced)
1 green pepper (diced)
1 lb. mushrooms (sliced)
8-10 potatoes (sliced)
1 lb. cheese (grated)
Cut sliced bacon into l/2 inch pieces and brown in bottom of Dutch oven. Add onions, peppers and mushrooms and sauté. Add potatoes and mix well. Season with garlic salt and pepper (I like lemon pepper). Cover and bake until potatoes are tender (approximately 45 minutes to one hour). Add 3/4 of the cheese and stir into potatoes. Sprinkle remaining cheese on top. Cover just long enough for the cheese to melt.
